

In 2022, I worked with Dekmantel on a special project at Lentekabinet: the Future-Forward Foodcourt. The idea was to explore how a festival foodcourt could operate with minimal waste, while also inspiring visitors to think differently about food and resources. This project was made possible by the Province of Noord-Holland.


At the festival we created a circular, waste-free foodcourt where food waste was collected and composted on site, with the compost later donated to a local care farm. Together with the catering partners, I helped develop a Future-Forward menu with local, plant-based and climate-conscious ingredients, offering visitors a taste of a possible future food system.
The project also included a resource plan, monitoring and data collection during the event, and several communication outputs:

For me, the Future-Forward Foodcourt was about combining creativity, sustainability and communication in a way that felt tangible and inspiring – a small but meaningful step towards more sustainable festivals.
