Future-Forward Foodcourt

About
A waste-free foodcourt with a future-forward menu developed for Lentekabinet 2022 in collaboration with Seavents and Fou Food Lab, exploring how food systems at festivals can become local and low-impact. Supported by the Province of Noord-Holland.

Why
Food at festivals has a significant impact. Not the largest impact factor, but one of the most tangible ways to include visitors in sustainability efforts. This project set out to make alternative food systems visible and accessible.

Contribution
At the festival we created a waste-free foodcourt with a special future-forward menu; where food waste was collected and composted on site. 

  • Developed the Future-Forward food concept and menu together with food technology specialist Ivana Mik from Fou Food Lab. We focused on plant-based, circular, and climate-positive ingredients from local organisations, and convinced caterers to make a ‘switch’ from current ingredients.
  • Designed the circular system: on-site food waste collection, composting and donation of compost to a local care farm in collaboration with Seavents.

  • Created the resource plan and led monitoring & data collection during the event.

  • Produced communication outputs including project storytelling, visuals, an editorial article and a joint press release with the Province of Noord-Holland.
